Have you ever heard of vegan egg salad? I am telling you, it tastes so similar to real egg salad, but so much healthier and this version is cruelty-free! You can make it in less than 10 minutes and you will probably have all the ingredients already at home. (If you don´t have any Kala Namak, you need to get some. It only costs a couple of euros and you don´t need so it will last you for ages. )
This salad even tastes better the next day but I don´t think you will be able stop yourself from eating ALL of it. At once.
Vegan Egg salad
- Prep Time: 10 mins
- Total Time: 10 mins
- Category: Breakfast
- 300g tofu
- 2 tsp of mustard
- 1 tsp of turmeric
- a little bit of Kala Namak (black salt)
- 3 tbsp of vegan mayo
- 1 tbsp of pickled cucumber juice ( this isn´t a must)
- fresh chives, chopped
- Crumble your tofu.
- Add your ingredients to it apart from the chives.
- Add more mayo if you want it creamier and more salt if needed.
- Mix in the chives and serve with bread or anything you like.
Tastes amazing the next day as well!
