Oil free Avocado-Basil Pesto

I always liked pesto. So quick to make, just mix some store-bought pesto with some pasta and sprinkle some parmesan on top! Since going vegan I have ditched the parmesan and the store-bought pesto as well. Now I make my own pesto, as the ones you can buy at the supermarkets contain way too much oil. I don´t like that. Making your own pesto is fun, easy and you can play around with it, like I did here: adding some avocado into it. Yes, you do need a food processor but I promise you won´t regret buying one. Oil free Avocado-Basil Pesto

1/2 avocado a bunch of basil leaves about 50g of walnuts or pine nuts 1 garlic clove some pepper and salt half a juice of lemon some water (instead of the olive oil) Preparations: Mix everything in a food processor and serve with freshly cooked pasta. Serve with some extra nuts and fresh basil leaves.

Scale
  • 1/2 avocado
  • a bunch of fresh basil leaves
  • about 50g of walnuts or pine nuts
  • 1 garlic clove
  • some pepper and salt
  • half a juice of lemon
  • some water (instead of the olive oil)
  • nutritional yeast
  • fresh pasta

Instructions

  1. Mix everything in a food processor and serve with freshly cooked pasta.
  2. Serve with some extra nuts and fresh basil leaves. I also love adding some nutritional yeast on top as well.
