Super easy & healthy falafels!
For the falafels:
150 g baked beetroot chopped into smaller pieces
2 cloves of garlic
1 tbsp flour ( I used spelt flour)
280 g cooked chickpeas
2 tbsp *chickpea liquid
a handful of fresh cilantro
1 tsp ground cumin
*salt & pepper
For the wraps:
Put your chickpeas, chopped garlic cloves, 1 tbsp flour, roast beetroot, chickpea liquid, ground cumin, freshly ground pepper and fresh cilantro into a food processor and mix until creamy! If it is too dry add a bit more of chickpea liquid or water.
You don’t want to get a very wet mixture. Form balls and press them down a bit to make small patties.
I fried them in a non-stick frying pan on medium heat till they reached a nice and golden colour! Keep them warm in the oven till you cook the rest.
I served them in a special Turkish flatbread. I spread some home-made avocado hummus on the bread, put some sliced veggies, lettuce and sprouts on top, a few falafels and carefully rolled (folded) my bread or tortilla. You can also spoon a tablespoon of soy yogurt on the top as well! Such a healthy and delicious meal! You can also make the falafels ahead and freeze them so you always have something to eat later.
*the liquid from the can or from your water where the chickpeas were cooked
*I didn’t use any salt as the liquid was already a bit salty
